3 Healthy Breakfast Ideas When on the Go

A healthy breakfast is a great way to start your day outright.  However, if you are often running late in the morning, breakfast can be the last thing on your mind.  One way to keep healthy eating on a tight schedule is to eat breakfast on-the-go.  Here are three healthy breakfast ideas to try next time you are rushing out the door.

1. Smoothies

Smoothies are an easy and delicious healthy breakfast.  They are also incredibly easy to consume on-the-go.  Drinking something is always easier than eating, whether you’re driving to work or already sitting behind your desk.  Prep smoothies in advance to save even more time.  One way to meal prep is to make several large batches of smoothie and then freeze them in ice cube trays.  In the morning, simply throw a few cubes into the blender.

Smoothies are great for healthy eating because they are mostly made of fruit.  Blend up any fruits or vegetables you like along with low-fat yogurt or fruit juice.  You can even mix in peanut butter or protein powder for added energy.  Try different popular combinations like peanut butter and banana or strawberry, blueberry, and raspberry.

2. Breakfast burritos

The next best on-the-go breakfast is something you can eat with one hand.  Enter the breakfast burrito.  This is another healthy breakfast that can be customized to your individual taste.  A burrito can basically be anything rolled into a tortilla (and fewer carbs than bread!).  For breakfast, this usually means eggs, some type of meat, and vegetables.  Try scrambled eggs, ham, and cheese.  For a vegetarian option, tomatoes, spinach, cheese, and eggs are a delicious combination.  Your tortilla of choice can also be a chance to focus on healthy eating; try whole wheat or even spinach or tomato wraps.  If you’re feeling really adventurous, try making your shell out of eggs for an omelet-burrito combination.  Breakfast burritos can be made the morning of, or in advance, and then eaten on-the-go.

3. Oatmeal squares and granola bars

Oatmeal and granola are breakfast staples, but they can make quite a mess if you try to eat them while rushing down the sidewalk.  Try making these healthy breakfast options into a bar for an on-the-go version.  While there are plenty of these available in stores, they are often full of preservatives.  Making a large batch of your own is a great way to set up for a week of on-the-go, healthy eating.  Here is a vegan recipe for oatmeal squares you can try.  You will need

  •         2.5 cups regular rolled oats (not instant oats)
  •         3 tbsp chia seed
  •         1/2 cup + 1 tbsp ground flax
  •         1 tsp cinnamon
  •         1 tsp baking powder
  •         1/4 tsp kosher salt
  •         1 1/2 cups almond milk (or other milk)
  •         1/2 cup pure maple syrup (or other liquid sweeteners)
  •         2 tbsp nut or seed butter
  •         1 banana, chopped small
  •         1 tbsp pure vanilla extract
